Ingredients
400g of Firm Tofu
2 tsp Turmeric
1 tbsp Cornstarch
3 tbsp Plant Parm
1/2 tsp Salt
2 tbsp Plant Milk
1 Chopped Onion
1 Cubed Zucchini
1 Clove or Garlic
1/2 Cup of chopped Mushrooms
1 vegan pie crust
2 tbsp olive oil
1 cup of Mauxarella
Directions
- In a blender mix together the tofu, turmeric, cornstarch, Plant Parm, salt, plant milk. Mix well in blender until smooth.
- Saute the onion, zucchini, garlic, mushrooms and spinach at medium heat with some olive oil.
- Mix the tofu mixture with the sautéed vegetables
- Fill the pie crust with the mixture and top with the grated Mauxarella.
- Bake in the oven at 350 degrees for 35 minutes!
