Cashew: The Underdog of Superfoods

Cashews really deserve so much more recognition! They are versatile, you can make sauces, dressings, desserts, cheese, the list goes on… Not only are they a staple in many plant based households, they provide a wide range of nutrients for the body.

Originally native to South America and particularly Brazil, when the multitude of health benefits in cashews was discovered, they were later introduced by colonists to growing climates in Africa and India. Cashews are full of vitamins and minerals that are not only beneficial to your health, some components are essential to human development!

The content of vitamin B6 (pyridoxine) and folate help the body form red blood cells (erythrocytes). The primary function of erythrocytes is to carry oxygen from the lungs to body tissues, and remove carbon dioxide from the tissues back to the lungs for expulsion from the body. Vitamin B6 maintains normal brain function, and plays a vital role in the use of proteins. The more protein you eat, the more pyridoxine your body requires to effectively use it. Cashews become an ideal carrier of B6, as they contain on average 18g of protein per 100g quantity.

Cashews are high in monounsaturated fats, which have been proven to lower levels of harmful cholesterol (LDL) the compound which causes many cardiovascular diseases. Studies show that those who eat nuts and other plant based sources of monounsaturated fats regularly, may have up to a 37% reduction in risk of heart attack and stroke.

The presence of minerals such as magnesium and copper offer many functions as well. Magnesium aids in muscle relaxation and neuromuscular transmissions and is crucial for over 300 enzymatic reactions in the body. A magnesium deficiency can lead to issues such as insulin resistance, metabolic syndromes and osteoporosis. Copper is linked directly to bone health, and repairs connective tissues by maintenance of the collagen and elastin in our ligaments.
